Vegan Homemade Ice Cream

Homemade Ice Cream

1/2 cup of cashews - soaked for 2h in cold water (approx. 100g)

1 can of coconut cream - chilled in fridge overnight

7 dried dates (approx. 55g)

3 tablespoon cocoa powder

1 ripe banana (approx. 100g)

In a blender mix coconut cream and banana first, then add drained cashews, dates and cocoa powder until all is mixed well together. Divide into ice cream trays and freeze!

For extra sweetness, once these are chilled, dip them individually in a jar of melted chocolate briskly. Chocolate will harden in seconds! Serve immediately or place back in freezer for later :)
